Strawberry & Mascarpone Tart
Ingredients: |
[Crumb base] |
almond or sweet biscuits |
250g (9 ounce) |
melted butter |
75g (3 ounce) |
[Filling] |

mascarpone cheese |
250g (9 ounce) |
vanilla extract |

sliced strawberries |
250g (9 ounce) |
tart tin (with a removable bottom) |

Directions: |
1. Make the crumb base by mixing the smashed
biscuits and melted butter. |
2. Spoon the crumb into the tart tin and press firmly,
then refrigerate it. |
3. Separate the egg, mix the yolk + sugar and beat
until thoroughly mixed. |
4. Beat in mascarpone until you have a custard-
coloured cream, then add vanilla extract. |
5. In another bowl, beat the egg white until it stands
stiff, then fold into the creamed mascarpone(step4). |
6. Spread the mascarpone cream(step5) into the tart
crust, then put on strawberries. |
7. Refrigerate about 20 minutes. |
My Note / Story:
⇒ A really important thing about beating the egg
white I have to mention. When you beat the egg white trying to make it stiff, never
stop beating it until it actually stands stiff. If you want to succeed at once or avoid
a hard work, you can use an electric mixer. Beating egg white is a hard work to do, but
this egg white do give the dessert better texture and changes the density of the dessert.
⇒ In this recipe, it mentioned the word "fold". Fold something into something when
baking means pour mixture into another mixture a little at a time, then scrape the
the bottom of the bowl, take the mixture, and fold it over the other mixture. Fold does
not mean stir. The purpose of folding is to incorporate more air into the mixture, and
this will also determine the density, and the texture of a dessert.
⇒ This dessert is my sister's favorite one. I still remember one day evening, my
sister found some mascarpone cheese in our refrigerator, but at that time we don't have
much materials for making dessert and we did not plan to do a complicated dessert because
we were all too lazy that afternoon. So my sister decided to search on the web and find
a delicious, easy-making dessert, then we found this recipe.
