Australia seems like it would be the perfect place to go over Christmas because it's summer at the time. I've been told by previous travelers that the peoplle there are extremely friendly and the atmosphere is generally relaxed. If I were to travel there, I would want to focus my visit on Perth in Western Australia and the Gold Coast in Queensland.
