I've given you a list of books that I found and still find, very useful for image references for a drawing or demonstrate drawing methods for beginners, or for artists looking to refine their skills.

S.Savitt."Draw Horses with Sam Savitt." June 1991.
Elwyn H Edwards."Ultimate Horse." August 2002.
J. Hamm."How to Draw Animals." January 1983. This book has more than just horses, but the section helped me start drawing them.
Humans
Valerie L. Winslow."Classic Human Anatomy: The Artist's Guide To Form, Function, And Movement" December 23, 2008.
Graphic-Sha. "How To Draw Manga: Sketching Manga-Style Volumes 1 - 4." These books are hard to come by, but I find them invaluable. There are two more volumes 5 - 6, but I have been unsucessful in locating them.
